The main role will be played by durum wheat. It boasts a higher content of micronutrients than other cereals such as wheat or barley. Right in the middle are eggs, which will give the pasta not only full-fledged proteins and a stable shape, but also a smooth texture.
Both main ingredients come from the Italian Langhe, an area famous for its world-class wines and Piedmontese nuts. It is the optimal climate of this region and the purity of the local soil that gives the pasta its authentic taste and high micronutrient content.
We grind the grain in wooden mills as soon as possible after harvest, which minimizes the risk of oxidation. We then mix the semolina with water into a dough and extrude it to create the desired shape of the pasta. Then we let it dry naturally. Extrusion with a bronze nozzle is considered one of the best and most reliable production methods because it creates a rougher surface on the pasta, to which the sauce adheres better. The entire processing process takes place at low temperatures to preserve the maximum nutritional value of the raw materials and under careful supervision. This allows us to ensure a first-class texture, premium quality and great taste.
Tagliatelle are long and flat pasta with a slightly chewy texture that is perfect for soaking up and retaining the flavor of your favorite sauces. You will enjoy them equally with meat bolognese and tomato-basil.
