Criollo cocoa plants are very sensitive to growing conditions and therefore only make up one percent of the global harvest. However, they are the mildest and most aromatic of all varieties. They excel in their velvety smooth taste with a variety of fruity and spicy flavors without acidity or bitterness.
Cocoa beans are processed by fermentation and then ground and heated to produce fine cocoa powder. It is this processing process that preserves a wide range of minerals and vitamins in the product. In addition, the cocoa is not alkalized, so antioxidants and polyphenols are preserved.
