During the production (fermentation) of umeboshi, the red water ume-su, or ume vinegar, is produced as a waste product. In the modern production method, undried plums are pickled to leave more liquid. However, from a chemical point of view, it has nothing to do with vinegar. Ume vinegar has a salty-sour taste, and even though it has the word vinegar in its name, it rather salts the food than sours it. It contains a large amount of minerals, enzymes and vitamins in an absorbable form.
