Cinnamon is the bark of the cinnamon tree, which is peeled, dried and used as a spice. Its earthy-woody yet sweet flavor goes well with rice pudding, compote and cake. It also harmonizes very well with all kinds of dried fruit. A wonderful dish in which it excels is the sweet dish couscous with dried fruit, apples, cinnamon and lemon juice or grandma's apricot dumplings sprinkled with cinnamon and sugar. A pinch of brown powder adds flavor to chocolate drinks and coffee, and is also excellent on lamb.
