The difference between shoyu and tamari: Shoyu and tamari are more or less interchangeable, with the difference that tamari retains its flavor and aroma better during heat treatment. Shoyu, on the other hand, is recommended for the final seasoning of a finished dish. However, this is not an ironclad rule. Shoyu does not contain any flavor enhancers, dyes, or artificial sweeteners. In addition to the four basic flavors (sweet, bitter, salty, sour), there is a fifth flavor – umami.
