What would pistachio cookies be without pistachio butter! Ours is even made from Iranian pistachios, which we gently roast ourselves. In addition to that, we added finely chopped pistachios to the cookies for extra crunchiness and sweetened them with a little chicory syrup. And the coloring? Not only pistachios, but also matcha powder are responsible for this! So, will you try this pistachio cookie too, or will you rather reach for the chocolate and vanilla ones?
