The ham is one of the most demanding muscles and therefore cannot be a delicate part suitable for a minute preparation. The meat is lean and crumbly and is a great choice for slow preparation. You will not be fooled if you prepare a slow roast meat from it and then tear it (pulled meat). Thanks to its size, it is the right choice for classics of Czech cuisine such as Spanish birds, roulades, sauces or as a whole roast.
