Do you know how freeze-drying works?

In the drying chamber, the fresh fruit is deep-frozen to -100 °C. Then comes the first phase of drying. The temperature is raised back to zero and, thanks to the vacuum of 50 to 100 Pa, the water contained in the fruit gradually evaporates and is captured in the condensation chamber. During the last part of freeze-drying, the remaining moisture is removed and the fruit regains its crispy consistency. Approximately 6-7 kg of fresh fruit are used to produce 1 kg of freeze-dried fruit.
