This famous salad originated in Korea and can take many forms - but this recipe is purely plant-based. Bacilli kimchi contains fermented Wakame seaweed and shiitake mushrooms, plus delicious yeast, which provides the deep umami flavor typical of authentic kimchi without the need for fish sauce. The color and spiciness are achieved with original Korean hot peppers. Without added water, it is a pure work of nature.
