This finely ground baking soda is suitable for food purposes and no aluminum compounds were used in its production. We use it to leaven some doughs. In an acidic environment, it decomposes to form a gas, carbon dioxide, and therefore baking soda only makes dough rise when an acidic component is present. Examples of acidic components include honey, fermented milk products, and chocolate. For example, honey gingerbread can be left to rise with baking soda, and the result is more satisfactory than when using baking powder. The dosage of baking soda is much lower than the dosage of baking powder, and is often indicated in the recipe on the tip of a knife. For kneaded doughs, you can count on about 1 teaspoon of baking soda per 500 g of loose ingredients.
